Chawanmushi

Chawanmushi

About the Dish

Chawanmushi is a traditional Japanese savory egg custard, known for its silky-smooth texture and delicate flavor. The base is made by blending beaten eggs with dashi (Japanese soup stock), soy sauce, and mirin. Seasonal ingredients such as shrimp, chicken, fish cake, and mushrooms are added, making each serving slightly different depending on the chef and the season.

Historical Background
Chawanmushi has been enjoyed in Japan since the Edo period (17th century). The word literally means “steamed in a teacup.” Originally considered a refined dish for special occasions, it gradually became a staple of Japanese cuisine, often served at sushi restaurants and family gatherings alike. Its comforting flavor and elegant presentation make it beloved across generations.

At Sushi Ichi in Ureshino, the signature Jumbo Roll is a special creation filled with a variety of seasonal seafood. Generously sized, it’s perfect for sharing among four people. The harmony of fluffy sushi rice and fresh ingredients makes this roll a truly satisfying treat. It’s my personal favorite — a must-order every time I visit.

This beautifully arranged platter features a selection of fresh, seasonal fish. Because the catch changes with the seasons, no two sashimi experiences are ever exactly the same — each visit offers a unique taste of Japan’s rich seafood traditions.

My Way of Enjoying Sushi-Ichi

Sushi is one of Japan’s most famous foods, and it has a long history. Long ago, sushi began as a way to preserve fish with rice. Today, it has become a world-class cuisine loved everywhere.

When I enjoy sushi, I always start with sake. A glass of chilled sake refreshes the mouth, and Kyushu’s sake is often a little sweet — perfect for the first drink.

I begin with a plate of assorted sashimi to taste the freshness of the sea. Then I enjoy chawanmushi (steamed egg custard), which is warm and smooth. After that, grilled fish or tempura is a great choice. Many sushi restaurants also prepare these dishes with great skill.

The chef here is a true master of fish. He chooses the best seafood himself and knows how to simmer, grill, and make sushi with perfect balance. Every dish shows his care and passion.

Sushi here is not just food — it’s an experience. If you visit Japan, don’t miss the chance to try it for yourself!

Why I Recommend This Place

The quality of the fish here is just as good as what you would find in major cities like Tokyo or Osaka — but at a much more reasonable price. More than that, the chef and staff are warm and welcoming, which makes the experience even more special.

Every dish is carefully prepared, beautiful to look at, and of course, absolutely delicious. After enjoying fine sushi and sake, the perfect way to finish is with a cup of tea. As Ureshino is famous for its tea, it’s no surprise that the tea here is outstanding.
